Tastiest Mistake I've Ever Made

I
made this bread-machine recipe for light rye bread today, and mistakenly put in cumin seeds instead of caraway.

Amazing results. Think of rye bread from the corner delhi.

Corner Delhi? Did you mean to say deli? I don't know if you want to be calling the capital of a country as "corner Delhi!" :-)

If you're going to get the ingredients mixed up, I hope you store non-food items (drano, clorox, decon, etc.)FAR AWAY from the food items.

That said, I came pretty close to using cayenne pepper instead of cinnamon in the apple sauce-walnut-spice bread. That would have been some spicy bread.

Good site for breadbaking information: The Fresh Loaf.

1/2 cup of sauerkraut works well in rye, as does a small amount of carmelized onion. I tried 1/2 tsp of celery seed this week and that has added an interesting zest to the caraway.

In all cases though I suggest taking the dough out of the breadmaker, shaping/rising it, and cooking it on a baking stone. Much better crust.
